Garlic-Chilli Prawns with Soy-Butter Sauce

Ingredients
- 250g prawns, peeled and deveined
- 40g butter (approx. 3 tbsp)
- 4 large garlic cloves, minced
- 1.5 tbsp soy sauce
- 2 tbsp white wine (or splash of water)
- 1 tsp chilli flakes
- 2 stalks green onions, sliced
- 1/2 lemon (for juice)
- 1 fresh baguette
Method
- Ensure your 250g of prawns are patted dry with a paper towel.
- In a large skillet over medium-high heat, melt 20g of the butter.
- Add the 4 minced garlic cloves and 1 tsp of chilli flakes, then sauté for 1 minute.
- Add the 250g of prawns to the pan and cook for 1.5 to 2 minutes per side until pink.
- Pour in 2 tbsp of white wine and 1.5 tbsp of soy sauce.
- Add the remaining 20g of butter and swirl until a glossy sauce forms.
- Remove from heat, then add the juice of 1/2 a lemon and the 2 sliced green onions.
- Serve with your fresh baguette to mop up the sauce.
